Why are we OK eating meat? Why are we ok with animal testing? Why do we draw the line between humanity and animals?

Putting aside religious arguments which are a different argument all together I see a few reasons we justify to ourselves the mistreatment of Animals;

Animals aren't smart enough to protect

The problem with this argument is it's just too hard to define "smart". There is solid evidence of animals showing emotional intelligence, a self of sense, cooperation, imagination, even limited language ability with cultural abilty. No one would argue that your average animal is a smart as a average person, but if thats our criteria why do we so care about the mentally handicapped?
